About The Chef

John Hausotter, Executive Chef - “Born to cook” is how most of his friends would describe him. He was bitten by the culinary bug at an early age and knew that being a chef was the profession he wanted to pursue. John began learning the craft of culinary arts at the Hotel Del Coronado in San Diego. After working in all aspects of the hotel kitchen, he rose to become a Sous Chef at the prestigious Prince of Wales restaurant. After a stint as a culinary instructor for CalFire, he became an Executive Chef for the Hilton Corporation. John ascended to the role of Executive Chef at Mount Palomar Winery’s Shorty’s Bistro in the beginning of 2011. The menu at Shorty’s Bistro is as diversified as John’s background, drawing upon Mediterranean, Southwestern, and California styles of cuisine and influences. Being at a winery, where the food and wine pairings are particularly important is of great interest to him, stating: “The correct pairing of food and wine can bring out so many different elements in both the food and the wine, and that is a challenge I embrace.”
